Soup for the Soul

With fall closely (and finally) approaching, I wanted to share this recipe my mom used to make all the time. We call it Autumn Soup, and it is hands down my favorite soup of all time. It's simple, delicious and just makes me feel so cozy!

Autumn Soup

Ingredients:

  • 1 lb. of ground beef or turkey

  • 1 cup chopped onions

  • 1 cup chopped carrots

  • 1 cup diced celery

  • 1 cup cubed potato

  • 4 cups water

  • 1 tsp. brown bouquet sauce

  • 1 bay leaf (dried)

  • 1/8 tsp. basil (dried)

  • 6 tomatoes OR 1- 28oz canned tomatoes with liquid

  • 2 tsp. salt

  • 1/4 tsp. pepper

  • Optional add ins: 1 cup sliced zucchini and/or yellow squash, 1/2 cup corn, cooked rice or noodles.

Directions:

  1. Cook meat with onions in large pot and drain fat.

  2. Stir in other ingredients, except potatoes, and heat until boiling.

  3. Reduce heat, cover, and simmer for 20 minutes.

  4. Add potatoes

  5. Cover and simmer until all veggies are tender.

OR

  1. Put cooked meat and onion directly into crock pot.

  2. Add rest of ingredients.

  3. Cook until veggies are tender, high 2-3 hours.
